Research & Development Cocktail Night - Volume 3

Our Research & Development Cocktail Night is back for its third edition at The Gillmont.

This is where our Cocktail Nights began, and unlike our themed evenings, there are no rules for this one.

We give our bar team complete creative freedom to develop five brand-new cocktails, experimenting with the spirits, flavours, ingredients and techniques they’re most excited about right now.

You'll be among the first people to try them...

Across the evening, you'll enjoy five full-sized cocktails, with our team talking you through the thinking behind each one, what they've been experimenting with and how the drink made its way from an idea to the glass in front of you.

And this really is research and development. We want to know what you think. Your feedback helps us refine the drinks, decide what deserves another outing and, ultimately, shape what you might find on future menus at The Gillmont.

Some ideas will be polished. Some might be a little more experimental. That's exactly what this night is for.

Guests arrive from 7pm, with cocktails served throughout the evening until around 9:30pm.

A selection of bar snacks, including olives, nuts, and crisps, will be available to purchase on the night, and you're very welcome to stay with us afterwards for additional drinks at the bar.
